A simple and satisfying weeknight meal combining tender chicken, zesty marinara, and gooey mozzarella.

  • 2 boneless skinless chicken breasts
  • 1 cup breadcrumbs
  • ½ cup grated parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 egg, beaten
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix together the breadcrumbs, parmesan cheese, garlic powder, oregano, salt, and pepper in a shallow dish until well combined.
  3. Dip each chicken breast into the beaten egg, ensuring it’s fully coated.
  4. Coat the chicken in the breadcrumb mixture, pressing gently to help the crumbs stick.
  5. Heat the olive oil over medium heat in a skillet. Then, sear the chicken on both sides until golden brown—approximately 3-4 minutes per side.
  6. Transfer the chicken to a baking dish. Top each breast with marinara sauce and a generous sprinkle of shredded mozzarella cheese.
  7. Bake for 20 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.

Notes

For an extra crunch, substitute breadcrumbs with panko or use gluten-free alternatives.
