  • 1/2 cup plain breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1 large egg, beaten
  • Salt and freshly ground black pepper to taste
  • Cooking spray

Instructions

  1. Prep the chicken: Begin by slicing the chicken breasts in half horizontally and pounding them to about 1/2-inch thickness.
  2. Season: Generously season both sides with salt and freshly ground black pepper.
  3. Set up the breading station: Prepare a beaten egg in one shallow dish, and a mix of breadcrumbs and Parmesan cheese in another.
  4. Coat the chicken: Dip each cutlet into the beaten egg, allowing the excess to drip off, then press each side into the breadcrumb mixture.
  5. Preheat your oven to 400°F (200°C).
  6. Arrange on a baking sheet: Lightly coat a baking sheet with cooking spray and arrange the breaded chicken cutlets in a single layer.
  7. Bake: Bake for 20-25 minutes until the chicken is cooked through and golden brown.
  8. Add marinara and cheese: Spoon marinara sauce over each cutlet and sprinkle with shredded mozzarella cheese.
