Easy Baked Chicken Parmesan

An incredible dish that combines crispy, cheesy chicken with a hint of Italian flair, perfect for busy weeknights.

  • 4 boneless skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup panko bread crumbs
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 large eggs
  • Olive oil or cooking spray

Instructions

  1. Preheat your oven to 400°F (200°C) and line or grease a baking sheet.
  2. Prepare the chicken: Either slice the chicken breasts horizontally or pound them to achieve even thickness.
  3. Whisk the eggs in a bowl until combined well.
  4. Mix in another bowl the Parmesan cheese, panko breadcrumbs, garlic powder, paprika, salt, and pepper.
  5. Coat the chicken: Dip each piece into the egg mixture, letting excess drip off before pressing gently into the Parmesan mixture to coat well.
  6. Arrange the chicken on the prepared baking sheet and spray lightly with olive oil or cooking spray.
  7. Bake for 20–25 minutes, flipping halfway through, until golden brown and the internal temperature reaches 165°F (74°C).
  8. Allow the chicken to rest for a few minutes before serving to lock in flavor.

Notes

For a twist, consider using Italian-seasoned breadcrumbs or fresh herbs for added flavor. You can also substitute almond flour for breadcrumbs for a lower-carb option.
