A cozy mix of sautéed veggies and fluffy eggs baked with melted cheese, perfect for brunch or meal prep.

  • 4 cups mixed veggies (bell peppers, onions, and spinach)
  • 6 large eggs
  • 1 cup shredded cheese (cheddar or your favorite)
  • 1 cup cooked sausage or bacon (optional)
  • Salt and pepper to taste
  • Olive oil or butter for cooking

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat a tablespoon of olive oil in a large skillet over medium heat.
  3. Add the mixed veggies and sauté for about 5 minutes, until tender.
  4. Whisk together the eggs and season with salt and pepper.
  5. If you’re adding meat, stir in the cooked sausage or bacon with the veggies.
  6. Pour the egg mixture evenly over the veggies and meat, ensuring all pieces are coated.
  7. Top with shredded cheese.
  8. Bake in the preheated oven for 15-20 minutes, until the eggs are set and the cheese is bubbly.
  9. Remove from the oven and let cool slightly before slicing and serving.

Notes

For a delightful presentation, slice into wedges and serve with fruit salad or toast. Cover leftovers in the fridge for up to three days.
