Crispy, golden potatoes seasoned perfectly for a hearty breakfast, ideal for busy mornings or family brunches.

Ingredients

  • 2 pounds of Yukon Gold or red potatoes
  • 2 tablespoons of olive oil
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 1 teaspoon of smoked paprika
  • Salt to taste
  • Pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dice the potatoes into small cubes.
  3. In a large mixing bowl, combine the diced potatoes with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Toss well until all pieces are coated evenly.
  4. Spread the seasoned potatoes in a single layer on a baking sheet.
  5. Roast in the preheated oven for 25-30 minutes, flipping halfway through for even browning.
  6. Once they are golden brown and crispy, garnish with freshly chopped parsley and serve.

Notes

For extra crunch, consider broiling the potatoes for the last few minutes. Store leftovers in an airtight container in the fridge for up to 3 days.
