A quick and satisfying recipe for crispy chicken breasts topped with rich cheese, perfect for family dinners.

  • 2 eggs
  • ⅔ cup seasoned Italian bread crumbs
  • ⅓ cup freshly grated Parmigiano-Reggiano cheese
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon finely chopped fresh herbs (thyme, parsley, chives, or rosemary)
  • 34 boneless skinless chicken breasts (about pounds), pounded ¼”-thick
  • ¼ cup olive oil
  • Lemon wedges, for serving

Instructions

  1. Prepare three shallow bowls: one filled with flour, another with beaten eggs, and the last with a mix of bread crumbs, Parmigiano-Reggiano, salt, pepper, and chopped herbs.
  2. Season the chicken breasts liberally with salt and pepper for added flavor.
  3. Bread the chicken: Coat each piece first in flour, then dip it in the egg mixture, letting the excess drip off. Finally, press each piece into the breadcrumb mixture to ensure a good coating. Repeat for all the chicken pieces.
  4. Heat the olive oil in a large sauté pan over medium heat until shimmering.
  5. Add the breaded chicken breasts to the pan and cook for 2 to 3 minutes on one side until golden brown. Flip and cook for an additional 2 to 3 minutes or until fully cooked through.
  6. Serve immediately with fresh lemon wedges.

Notes

Pound the chicken evenly for uniform cooking. Keep oil at medium heat to avoid burning breadcrumbs.
