Easy Chicken Parmesan

A delightful Italian-American comfort food combining crispy, breaded chicken, marinara sauce, and gooey mozzarella.

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup Italian-style breadcrumbs
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix the flour with salt and pepper in one bowl. In another, whisk the eggs until frothy. Fill a third bowl with breadcrumbs.
  3. Take a chicken breast, coat it in the seasoned flour, dip it into the egg mixture, and let the excess drip off. Finally, roll it in the breadcrumbs until well-coated.
  4. Heat the olive oil in a skillet over medium heat. Fry the breaded chicken for 4-5 minutes on each side until golden brown.
  5. Transfer the chicken cutlets to a baking dish. Pour marinara sauce over each piece and sprinkle with mozzarella and parmesan cheese.
  6. Bake for 20-25 minutes until the cheese is bubbly and golden. For an extra crispy top, broil for a minute or two.
  7. Allow the chicken to rest for a few minutes before serving.

Notes

For an appealing presentation, serve on spaghetti drizzled with olive oil. Pair with garlic bread and salad.
