A quick and comforting Italian-American dish that transforms any meal into something special, Easy Chicken Parmesan is perfect for family dinners and impressing guests.

  • 2 eggs
  • ⅔ cup seasoned Italian bread crumbs
  • ⅓ cup freshly grated Parmigiano-Reggiano cheese
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon finely chopped fresh herbs (such as thyme, parsley, chives, or rosemary)
  • 34 boneless skinless chicken breasts (about pounds), pounded ¼” thick
  • Extra salt and freshly ground black pepper for seasoning
  • ¼ cup olive oil
  • Lemon wedges for serving

Instructions

  1. Prepare the Breading Station: Set up three large shallow bowls. Fill one with flour, the second with beaten eggs, and the third with a mix of bread crumbs, grated cheese, salt, pepper, and herbs.
  2. Season the Chicken: Generously season both sides of the chicken breasts with salt and pepper.
  3. Bread the Chicken: Dredge each chicken breast in flour, dip it in the egg mixture, and then coat it with the breadcrumb mixture. Ensure each piece is well-covered for that perfect crunch.
  4. Cook the Chicken: In a large sauté pan, heat the olive oil over medium heat. Once hot, add the breaded chicken breasts and cook for 2-3 minutes until they are golden brown. Flip and cook for another 2-3 minutes until fully cooked through.
  5. Serve: Plate the chicken hot, garnished with lemon wedges for squeezing over just before eating.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in the oven at 350°F for about 10-15 minutes to maintain crispiness.
