A comforting and budget-friendly Chicken Parmesan recipe that’s perfect for weeknight dinners or family gatherings.

  • 4 boneless, skinless chicken breasts
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 can (28 oz) San Marzano crushed tomatoes
  • 2 cups shredded mozzarella cheese
  • Fresh basil for garnish
  • Olive oil for frying

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix together panko breadcrumbs, grated Parmesan cheese, garlic powder, dried oregano, salt, and black pepper in a bowl.
  3. Dredge each chicken breast in the breadcrumb mixture thoroughly to ensure an even coating.
  4. Heat olive oil in a large skillet over medium heat and fry the chicken breasts for 4-5 minutes on each side until golden brown.
  5. Spread the crushed tomatoes evenly in a baking dish, then place the fried chicken breasts on top.
  6. Cover each piece of chicken generously with shredded mozzarella cheese.
  7. Bake in the preheated oven for 15-20 minutes, or until the cheese is bubbly and golden.
