A quick and budget-friendly chicken parmesan dish with crispy chicken, gooey cheese, and zesty marinara that’s perfect for weeknight dinners.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 1 cup fresh mozzarella cheese, sliced
  • 1 large egg
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts generously with salt and pepper.
  3. Whisk the egg in one bowl, and combine breadcrumbs with grated Parmesan cheese in a second bowl.
  4. Dip each chicken breast in the egg, then coat in the breadcrumb mixture, pressing firmly.
  5. Heat olive oil in a large skillet over medium-high heat. Add your breaded chicken and cook for about 4-5 minutes on each side until golden brown.
  6. Transfer the chicken to a baking dish. Pour marinara sauce over each piece, then layer with slices of fresh mozzarella.
  7. Bake for 15-20 minutes, or until the cheese is bubbly and chicken reaches 165°F internally.
  8. Garnish with fresh basil and serve hot.

Notes

For extra crunch, consider double-coating the chicken. Use pre-made breaded chicken cutlets to save time. Ensure oil is hot enough for a golden crust.
