A comforting classic featuring juicy breaded chicken breasts topped with marinara and gooey mozzarella.

  • 2 chicken breasts
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 2 eggs
  • Olive oil
  • Salt and pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Generously season the chicken breasts with salt and pepper.
  3. Beat the eggs in a bowl until well combined.
  4. Mix together the breadcrumbs and grated Parmesan cheese in another bowl.
  5. Dip each chicken breast into the beaten eggs, allowing excess to drip off, then coat thoroughly with the breadcrumb mixture.
  6. Heat a drizzle of olive oil in a skillet over medium heat. Cook the breaded chicken until golden brown on both sides.
  7. Transfer the chicken to a baking dish. Pour the marinara sauce over the top and finish with a generous layer of shredded mozzarella cheese.
  8. Bake for about 20-25 minutes, until the chicken is cooked through and the cheese is bubbly and melted.
  9. Serve hot, garnished with fresh basil if desired.

Notes

Double dip for an extra crispy coating, and use a meat thermometer to ensure chicken reaches an internal temperature of 165°F.
