Easy Chicken Parmesan

A comforting classic that balances crispy, golden chicken with rich marinara and bubbling mozzarella, perfect for weeknight dinners.

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1.5 cups Italian-seasoned breadcrumbs
  • 2 cups marinara sauce
  • 2 cups freshly shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the chicken breasts between two sheets of plastic wrap and pound until they are about half an inch thick.
  3. Prepare your dredging station by setting up three bowls: In the first bowl, whisk the eggs and season them with salt and pepper; in the second bowl, season flour with salt and pepper; in the third bowl, mix breadcrumbs with grated Parmesan cheese.
  4. Dredge each piece of chicken first in the seasoned flour, then dip in the egg, and finally coat with the breadcrumb mixture.
  5. Heat the olive oil in a skillet over medium heat and fry the breaded chicken for about 3 minutes on each side until golden brown.
  6. Layer marinara sauce in a baking dish, place the fried chicken on top, add more sauce, and sprinkle with mozzarella cheese.
  7. Bake for 15 minutes, or until the cheese is melted and bubbly.

Notes

For an extra twist, consider swapping out the Italian breadcrumbs for panko for extra crunch.
