  • 2 large sprigs basil
  • 6 garlic cloves, minced
  • Kosher salt to taste
  • 1 small yellow onion, diced
  • Black pepper to taste
  • 3 tbsp extra-virgin olive oil
  • 6 boneless, skinless chicken cutlets
  • 1 cup panko bread crumbs
  • 1 cup vegetable oil
  • 1 cup finely grated Parmesan
  • 2 large eggs, beaten
  • 1 tsp garlic powder
  • 3/4 cup all-purpose flour
  • Chopped fresh basil for serving
  • 1 cup shredded mozzarella

Instructions

  1. Prepare the Sauce: Heat olive oil in a saucepan over medium heat. Sauté diced onion until translucent. Stir in minced garlic for another minute. Add crushed tomatoes, season with salt and pepper, and let simmer for about 20 minutes until thick.
  2. Prep the Chicken: Set up a breading station with one bowl for flour and garlic powder, one for beaten eggs, and one for panko breadcrumbs.
  3. Breading Process: Dredge chicken cutlets in the flour mixture, dip in egg, and coat with panko breadcrumbs.
  4. Fry the Chicken: Heat vegetable oil in a skillet over medium-high heat. Fry breaded chicken for 4-5 minutes on each side until golden brown. Drain on paper towels.
  5. Assemble and Bake: Preheat the oven to 375°F. In a baking dish, layer sauce, fried chicken, more sauce, mozzarella, and Parmesan. Bake for about 20 minutes until cheese is bubbly.
  6. Garnish and Serve: Let rest for a few minutes and sprinkle fresh basil before serving.

Notes

For a healthier spin, consider baking the chicken cutlets instead of frying. You can also use gluten-free breadcrumbs and flour for a gluten-free version.
