A refreshing and creamy cucumber soup perfect for hot summer days.

Ingredients

  • 1 cup Greek yogurt
  • 1 cup vegetable broth
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a blender, combine the peeled and diced cucumbers, Greek yogurt, vegetable broth, chopped dill, lemon juice, salt, and pepper.
  2. Blend until the mixture is smooth and creamy.
  3. Chill in the refrigerator for at least 30 minutes.
