A simple and flavorful crockpot meal that combines tender chicken with a rich honey garlic sauce, perfect for busy weeknights.

Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680 g)
  • 1/3 cup honey (113 g)
  • 1/4 cup soy sauce (60 ml), low-sodium preferred
  • 4 garlic cloves, minced
  • 1/4 cup ketchup (60 ml)
  • 2 tablespoons rice vinegar (30 ml)
  • 1/4 cup water (60 ml)
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon cornstarch (8 g)
  • 2 tablespoons water (for cornstarch slurry)
  • 2 green onions, sliced (for garnish)

Instructions

  1. In a mixing bowl, whisk together honey, soy sauce, minced garlic, ketchup, rice vinegar, water, and red pepper flakes if you’re feeling adventurous.
  2. Place the chicken breasts at the bottom of your crockpot, spacing them out for even cooking.
  3. Pour the sauce mixture over the chicken. Do not stir; let it sit.
  4. Cover and cook on low for about 4-5 hours or on high for 2-3 hours, until the chicken is tender and shreddable.
  5. About 15 minutes before serving, mix cornstarch with cold water to create a slurry.
  6. Remove the chicken from the crockpot and set aside. Stir in the cornstarch slurry into the sauce and cook on high for another 10-15 minutes until thickened.
  7. Pour the sauce over the chicken and garnish with sliced green onions before serving.

Notes

Use low-sodium soy sauce to control salt levels. Marinate chicken in sauce for an hour for more flavor. Do not skip the cornstarch slurry for a thick sauce.
