Transform your mornings with these delightful egg breakfast wraps filled with fluffy scrambled eggs, crispy hash browns, and your choice of toppings.

Ingredients

  • 6 large flour tortillas
  • 6 eggs
  • 1 cup shredded cheese (cheddar, Mexican blend, etc.)
  • 1 cup cooked hash browns or tater tots
  • ½ lb cooked breakfast sausage or bacon
  • 1 tbsp butter or oil, for cooking
  • Salt and pepper, to taste
  • Small tortillas or cut-out rounds for center cap
  • Optional: diced peppers, onions, spinach, salsa

Instructions

  1. Whisk the eggs in a bowl with a pinch of salt and pepper until blended. Scramble them in a pan over medium heat until just set.
  2. Fry the hash browns or tater tots in another pan until they’re golden brown and crispy. If using bacon or sausage, cook those until browned as well.
  3. Lay a tortilla flat on a clean surface. Place a generous layer of cooked eggs, your choice of meat, some cheese, and the crispy hash browns in the center.
  4. Top it with a small tortilla round or cut-out to help seal the mixture. Fold the edges of the large tortilla inward, creating a secure wrap.
  5. Heat a skillet over medium heat. Place the wrapped tortilla seam side down in the pan. Cook for 2-3 minutes until it’s golden brown, then flip and cook for another 2-3 minutes.
  6. Serve hot, optionally garnished with toppings like salsa, avocado, or fresh herbs.

Notes

Feel free to swap out the cheese or protein to suit your taste. Vegetarians can use plant-based sausage or skip the meat altogether for a wholesome, veggie-packed wrap.
