  • 1 cup diced vegetables (like bell peppers, onions, and spinach)
  • 1 cup shredded cheese (like cheddar or mozzarella)
  • 1/2 cup cooked meat (like bacon or sausage, optional)
  • Salt and pepper to taste
  • Cooking spray or muffin liners

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a muffin tin with cooking spray or line it with muffin liners.
  3. Whisk together the eggs and milk in a large mixing bowl until well combined.
  4. Stir in your diced vegetables, cheese, and cooked meat (if using).
  5. Season the mixture with salt and pepper to taste.
  6. Evenly pour the egg mixture into the muffin tin, filling each cup about 3/4 full.
  7. Bake in the preheated oven for 20-25 minutes until set and lightly golden on top.
  8. Let them cool for a few minutes before removing from the tin.
