Transform English muffins into a savory breakfast delight with scrambled eggs, sausage, and cheddar cheese.

  • 8 eggs
  • 1 lb beef sausage
  • 8 oz mild cheddar cheese, thinly sliced
  • 2 cups milk (for sawmill gravy)
  • 1/4 cup beef drippings (add butter if insufficient drippings)
  • 1/4 cup flour (for sawmill gravy)
  • 1/2 teaspoon salt (for sawmill gravy, or to taste)
  • 1/4 teaspoon pepper (for sawmill gravy, or to taste)

Instructions

  1. Prep the muffins: Split the English muffins in half and place them cut-side up on a baking sheet.
  2. Cook the sausage: In a skillet over medium heat, crumble and cook the beef sausage until browned, reserving about 1/4 cup of the drippings. Drain the sausage and set aside.
  3. Scramble the eggs: In a bowl, whisk the eggs with salt and pepper. Scramble the eggs in the same skillet until just set.
  4. Make the sawmill gravy: Heat the reserved beef drippings (or butter) in the skillet. Whisk in the flour and cook for 1-2 minutes until a pale golden brown. Gradually whisk in the milk, about 1/2 cup at a time, until smooth. Let it simmer for 5-7 minutes until thickened, then season with salt and pepper.
  5. Assemble the pizzas: Spread the scrambled eggs evenly over each muffin half, followed by the cooked sausage.
  6. Add cheese and gravy: Lay the thinly sliced cheddar over the sausage, then spoon a dollop of sawmill gravy over the cheese on each pizza.
  7. Bake to perfection: Bake in a preheated oven at 375°F (190°C) for 10-12 minutes, or until the cheese is melted and bubbly. Allow to cool slightly before serving.

Notes

Feel free to swap turkey sausage for a lighter option or substitute the cheddar with your favorite cheese. Monitor cooking temperatures to keep eggs fluffy.
