A quick and delicious low-carb casserole with tender chicken, crunchy broccoli, and creamy cheese, perfect for weeknight dinners.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup broccoli florets
  • 1 cup cauliflower, riced
  • 1 cup cheddar cheese, shredded
  • 1/2 cup cream cheese, softened
  • 1/2 cup sour cream
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Optional: chopped green onions for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the chicken: Grill or boil the chicken until no longer pink, then let it cool and shred it.
  3. In a large mixing bowl, combine the shredded chicken, broccoli florets, riced cauliflower, softened cream cheese, sour cream, garlic powder, and half of the cheddar cheese. Season with salt and pepper to taste.
  4. Transfer the mixture to a greased 9×13-inch casserole dish and spread it evenly.
  5. Top with the remaining cheddar cheese.
  6. Place in the oven and bake for about 30-35 minutes, or until the casserole is bubbling and golden on top.
  7. Let it cool for a few minutes before serving. Garnish with chopped green onions if desired.

Notes
