These Easy One-Bowl Carrot Oatmeal Muffins are healthy, delicious, and perfect for breakfast or a snack.

Ingredients

  • 1 cup rolled oats
  • 1 cup grated carrots
  • 1 banana, mashed
  • 2 eggs
  • 1/2 cup honey or maple syrup
  • 1/2 cup almond milk or any milk
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • Optional: nuts, raisins, or chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, combine the rolled oats, grated carrots, mashed banana, eggs, honey or maple syrup, and almond milk. Mix until fully integrated.
  3. Stir in the baking powder, cinnamon, and salt until the mixture is well combined.
  4. If desired, fold in your choice of nuts, raisins, or chocolate chips for extra flavor and texture.
  5. Divide the mixture evenly into the prepared muffin tin.
  6. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow to cool for a few minutes before serving.
