A simplified take on the classic Chicken Parmesan, this easy oven-baked version transforms chicken breasts into a delightful meal perfect for weeknight dinners or gatherings.

  • 2 large chicken breasts, sliced horizontally into 4 pieces
  • 1 cup fine breadcrumbs (plain or Italian-style)
  • ½ cup grated Parmesan cheese, plus extra for topping
  • 1 tsp garlic powder
  • 1 large egg, beaten
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella
  • Salt and black pepper to taste
  • Olive oil spray or 1 tbsp olive oil
  • Optional: Dried oregano, basil, red pepper flakes, fresh basil or parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the chicken breasts into 4 thin pieces. Season generously with salt and pepper.
  3. Beat the egg in one bowl. In another, combine breadcrumbs, grated Parmesan, garlic powder, and additional salt and pepper.
  4. Dip each chicken piece into the beaten egg, allowing excess to drip off. Coat thoroughly with the breadcrumb mixture.
  5. Arrange the coated chicken pieces on a greased baking sheet. A light spritz of olive oil on top will enhance crispiness.
  6. Bake for about 20 minutes, flipping the chicken halfway through to ensure uniform cooking.
  7. Remove from the oven and generously top each piece with marinara sauce and shredded mozzarella, followed by an extra sprinkle of Parmesan.
  8. Return to the oven for an additional 5–10 minutes, or until the cheese is melted and bubbly.
