Delicious and fluffy ricotta egg bites perfect for breakfast, snacks, or brunch.

  • 1 cup ricotta cheese
  • 4 large eggs
  • 1/2 cup shredded cheese (e.g., cheddar or mozzarella)
  • 1/4 cup fresh herbs (e.g., chives, parsley)
  • Salt and pepper to taste
  • 1/2 teaspoon garlic powder (optional)
  • Oil or cooking spray (for greasing the muffin tin)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin with oil or cooking spray.
  2. Combine the ricotta cheese and the eggs in a mixing bowl.
  3. Add in the shredded cheese, fresh herbs, salt, pepper, and garlic powder (if using) to the bowl.
  4. Mix everything together until well combined.
  5. Pour the mixture evenly into the greased muffin tin, filling each cup about 3/4 full.
  6. Bake in the preheated oven for 20-25 minutes until the egg bites are set and golden around the edges.
  7. Let them cool for a few minutes, then run a knife around the edges to help release them from the tin.
  8. Enjoy warm or cool completely and store in the refrigerator for up to 5 days.
