A hearty and healthy bowl combining shredded chicken, corn, rice or quinoa, and black beans, topped with avocado and cilantro.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup cooked rice or quinoa
  • 1/2 cup black beans, drained and rinsed
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 avocado, diced
  • 1/4 cup chopped cilantro
  • Lime wedges for serving

Instructions

  1. In a large bowl, combine the cooked chicken, corn, rice (or quinoa), and black beans.
  2. Sprinkle in the cumin, chili powder, salt, and pepper.
  3. Gently mix until all ingredients are well combined and flavorful.
  4. Serve the mixture in bowls.
  5. Top with diced avocado and chopped cilantro.
  6. Don’t forget a squeeze of lime for added zest!

Notes

For added flavor, consider sautéing garlic and onion before adding them to the mixture. Adjust spices to taste.
