Crispy, savory waffles made with fresh vegetables, perfect for breakfast, lunch, or a snack.

Ingredients

  • 1 cup shredded zucchini
  • 1 cup shredded carrots
  • 2 large eggs
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 1/4 cup almond flour (or flour of your choice)
  • Salt and pepper to taste
  • Olive oil or cooking spray for the waffle maker

Instructions

  1. Preheat your waffle maker.
  2. In a medium bowl, mix together the shredded zucchini, carrots, eggs, shredded cheese, almond flour, salt, and pepper until well combined.
  3. Lightly grease the waffle maker with olive oil or cooking spray.
  4. Pour the veggie mixture into the waffle maker, spreading it evenly.
  5. Close the waffle maker and cook for about 3-5 minutes until golden brown and crisp.
  6. Carefully remove the chaffles and serve warm.
