A quick and flavorful chicken breast dinner that combines succulent chicken with colorful veggies, perfect for busy weeknights.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons fresh herbs (parsley, thyme)
  • 2 cups vegetables (bell peppers, broccoli)
  • 2 cups rice or pasta
  • 3 tablespoons soy sauce or teriyaki sauce
  • Cheese (optional)
  • Seasonings (salt, pepper, paprika)

Instructions

  1. Begin by trimming excess fat from the chicken breasts and patting them dry.
  2. Combine olive oil, minced garlic, and fresh herbs in a bowl. Marinate the chicken in this mixture for at least 15 minutes.
  3. Heat a skillet over medium-high heat. Cook the chicken for about 5-7 minutes on each side until golden brown and cooked through.
  4. Prepare your sides by steaming the veggies or boiling the pasta while the chicken cooks.
  5. Plate the chicken alongside the sides and garnish with fresh herbs.

Notes

For a spicier kick, add crushed red pepper flakes to the marinade. You can also experiment with different sauces and vegetables.
