Ingredients
Scale
2 boneless, skinless chicken breasts
1 cup bread crumbs
1/2 cup grated Parmesan cheese
1 teaspoon Italian seasoning
1 cup marinara sauce
1 cup shredded mozzarella cheese
1/2 cup flour
2 eggs, beaten
Salt and pepper to taste
Olive oil for frying
Instructions
Preheat your oven to 375°F (190°C).
Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness. Season lightly with salt and pepper.
Set up your breading station: Arrange one dish with flour, another with beaten eggs, and a third with a mixture of breadcrumbs, Parmesan cheese, and Italian seasoning.
Dredge each chicken breast in flour, ensuring it’s completely coated. Next, dip it into the egg, allowing any excess to drip off, and finally coat it in the breadcrumb mixture.
Heat olive oil in a skillet over medium heat. Fry each chicken breast for about 4-5 minutes on each side until they are golden brown and cooked through.
Transfer the fried chicken to a baking dish. Pour marinara sauce over each piece and sprinkle a generous amount of shredded mozzarella on top.
Bake in the preheated oven for about 20 minutes, or until the cheese is melted and bubbly.
Serve hot and enjoy every bite!
Notes
For variation, substitute marinara with pesto or try eggplant or zucchini slices for a veggie option.
