  • 1/2 cup honey or maple syrup
  • 2 cups rolled oats
  • 1/4 cup protein powder
  • 1/2 cup chopped nuts or seeds (optional)
  • 1/2 cup chocolate chips (optional)
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. In a large mixing bowl, combine the almond butter, honey or maple syrup, and vanilla extract. Mix until smooth and well combined.
  2. Add in the rolled oats, protein powder, and salt. If using optional ingredients like nuts or chocolate chips, toss them in now.
  3. Stir everything together until fully mixed and no dry bits remain.
  4. Press the mixture firmly into a lined 8×8 inch baking dish, spreading it evenly.
  5. Refrigerate for at least 2 hours, allowing the bars to firm up.
  6. Once set, cut into bars and enjoy as a quick snack or post-workout treat.

Notes

For a sugar-free option, substitute honey with a sugar-free syrup. These bars can be stored in an airtight container in the refrigerator for up to one week or frozen for up to three months.
