Ingredients

  • Boneless, skinless chicken breasts or thighs
  • Olive oil
  • Minced garlic
  • Fresh herbs (rosemary and thyme)
  • Salt
  • Pepper
  • Optional: Bell peppers, broccoli, or other vegetables

Instructions

  1. Combine olive oil, minced garlic, chopped fresh herbs, salt, and pepper in a bowl. Mix well.
  2. Coat the chicken evenly in the marinade. Let it marinate for at least 30 minutes.
  3. Preheat your oven to 400°F (200°C).
  4. Arrange the marinated chicken on a baking tray and surround it with chopped vegetables.
  5. Bake for 25-30 minutes, until cooked through. Broil for the last 2-3 minutes for a golden finish.
  6. Remove from the oven and let it rest for a few minutes before serving.

Notes

For a more intense flavor, marinate for longer than 30 minutes or even overnight. If adding lemon juice, do not marinate for too long.
