A delightful dish that combines tender chicken breasts with a luscious mushroom and cream cheese filling, perfect for any occasion.

  • 4 boneless, skinless chicken breasts
  • 1 cup mushrooms, finely chopped
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add chopped mushrooms and garlic. Sauté until the mushrooms are tender, about 5-7 minutes.
  3. Combine the sautéed mushrooms, cream cheese, Parmesan cheese, and parsley in a bowl. Season with salt and pepper to taste.
  4. Carefully cut a pocket into each chicken breast, making sure not to cut all the way through.
  5. Stuff each chicken breast with the mushroom mixture. If needed, secure the opening with toothpicks.
  6. Heat a bit more olive oil in the skillet. Sear each stuffed chicken breast until golden brown on both sides, about 3-4 minutes per side.
  7. Transfer the chicken to a baking dish and bake in the preheated oven for about 20-25 minutes or until the chicken is fully cooked and juices run clear.
  8. Let the chicken rest for a few minutes before serving to lock in all the flavors.

Notes

For added flavor, marinate the chicken in herbs or lemon juice before stuffing. Use pre-sliced mushrooms for convenience.
