Fluffy and delicious flourless pancakes made with cottage cheese, perfect for a quick breakfast or brunch.

Ingredients

  • 1 cup cottage cheese
  • 4 large eggs
  • 1/2 cup almond flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Butter or oil for cooking

Instructions

  1. Blend your ingredients until smooth.
  2. Heat a non-stick skillet over medium heat, then add a splash of butter or oil.
  3. Pour a ladle of the batter onto the skillet. Cook until bubbles form on the surface, about 2 to 3 minutes, then flip and continue cooking until golden brown on the other side.
  4. Repeat this process with the remaining batter, adding more oil or butter as needed for cooking.
  5. Serve the pancakes warm, topped with your favorite additions.

Notes

For a lighter option, use low-fat cottage cheese or substitute almond flour with oat flour. Letting the batter rest improves fluffiness.
