  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 cups milk (or dairy-free alternative)
  • 2 eggs
  • 2 tablespoons maple syrup (or honey)
  • 1 cup diced apples
  • Optional toppings: chopped nuts or raisins

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin with oil or butter.
  2. In a mixing bowl, combine the rolled oats, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together milk, eggs, and maple syrup until smooth.
  4. Pour the wet mixture into the dry ingredients. Stir until everything is well combined.
  5. Gently fold in the diced apples, making sure they’re evenly distributed.
  6. Evenly distribute the mixture into the prepared muffin tin.
  7. Bake for 20-25 minutes, or until the oatmeal cups are set and lightly golden on top.
