Delightful bite-sized pancakes made with ripe bananas, perfect for breakfast or snacks.

Ingredients

  • 1 cup flour
  • 1 cup milk (or non-dairy milk)
  • 1 egg
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Mash the ripe banana in a mixing bowl until smooth.
  2. Add the flour, milk, egg, baking powder, vanilla extract, and salt to the mashed banana. Mix until smooth.
  3. Preheat a non-stick skillet over medium heat.
  4. Pour small amounts of batter onto the skillet to form mini pancakes.

Notes
