Delightfully fluffy mini pancakes perfect for breakfasts or snacks, rich in nostalgia and quick to prepare.

  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 2 tbsp granulated sugar
  • 1/4 tsp salt
  • 3/4 cup milk (or dairy alternative)
  • 1 large egg
  • 2 tbsp melted butter (or oil)
  • 1 tsp vanilla extract

Instructions

  1. In a large bowl, whisk together the flour, baking powder, sugar, and salt until well combined.
  2. In another bowl, mix the milk, egg, melted butter, and vanilla extract until smooth and creamy.
  3. Pour the wet mixture into the dry ingredients. Gently stir until just combined—don’t worry about a few lumps!
  4. Heat a non-stick skillet over medium heat. Once hot, pour small amounts of batter onto the skillet to form mini pancakes.
  5. Cook for 1-2 minutes, or until bubbles start to form on the surface. Flip them carefully and cook until they’re golden brown on both sides.
  6. Remove from the skillet and serve warm with your favorite toppings.

Notes

For extra fluffiness, let the batter rest for about 5 minutes before cooking. Try adding chocolate chips, nuts, or spices to the batter for different flavors.
