A simple and satisfying recipe for super fluffy pancakes, perfect for breakfast any day of the week.

  • 2 tablespoons Granulated Sugar
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Salt
  • 1 Large Egg
  • 1 1/4 cups Milk
  • 2 tablespoons Unsalted Butter, melted
  • 1 teaspoon Vanilla Extract

Instructions

  1. In a large bowl, whisk together the all-purpose flour, sugar, baking powder, and salt until well combined.
  2. In a separate medium bowl, lightly beat the egg, then add milk, melted butter, and vanilla extract, whisking until evenly mixed.
  3. Pour the wet ingredients into the dry ingredients and gently fold them together with a spatula, making sure the batter remains lumpy.
  4. Let the batter rest for 5-10 minutes for maximum fluffiness.
  5. Preheat a lightly buttered griddle or non-stick skillet over medium heat and pour or scoop 1/4 cup of batter onto the griddle.
  6. Cook for 2-3 minutes on each side, flipping when bubbles start to form on the surface.
