Instructions

  1. Crack the eggs into a bowl. Using a fork, whisk them until well combined. Add a pinch of salt and pepper.
  2. In a non-stick skillet, heat a tablespoon of butter over medium-low heat until it’s melted and bubbly.
  3. Pour the eggs into the warm skillet. Let them sit undisturbed for a few seconds to start cooking.
  4. With a spatula, gently stir the eggs, pushing the cooked edges toward the center.
  5. Continue cooking until the eggs are softly set and slightly runny. If you like, sprinkle cheese on top and stir until it melts throughout.
