Light and fluffy pancakes made with mashed sweet potatoes, perfect for breakfast or brunch.

Ingredients

  • 1 cup mashed sweet potatoes
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. In a mixing bowl, combine the mashed sweet potatoes, flour, baking powder, sugar, and salt.
  2. In another bowl, whisk together the milk, egg, melted butter, and vanilla extract until well blended.
  3. Pour the wet ingredients into the dry mix and stir gently until just combined.
  4. Heat a skillet over medium heat and lightly grease it.
  5. Pour about 1/4 cup of batter onto the skillet for each pancake.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown.
  7. Serve warm with your favorite toppings.

Notes

For fluffiest pancakes, do not overmix the batter. Preheat skillet properly.
