Delicious and convenient breakfast burritos that can be made in batches and frozen for busy mornings.

  • 12 large eggs
  • 1/2 cup milk
  • 1 pound breakfast sausage, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 12 (10-inch) flour tortillas
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, whisk together the eggs, milk, salt, and pepper.
  2. Heat the vegetable oil in a non-stick skillet over medium heat.
  3. Pour the egg mixture into the skillet. Cook, stirring occasionally, until the eggs are set but still moist—this should take about 5 minutes.
  4. Remove the cooked eggs from the skillet and set aside.
  5. Warm the tortillas slightly in the microwave or on a skillet to make them more pliable.
  6. Lay out each tortilla and fill it with a portion of the scrambled eggs, crumbled sausage, and both types of cheese.
  7. Fold in the sides of the tortillas, then roll them tightly to create burritos.
  8. Wrap each burrito individually in plastic wrap, followed by aluminum foil.
  9. Place the wrapped burritos in a freezer-safe bag or container and freeze for up to 3 months.
  10. To reheat, unwrap from the foil and plastic, wrap in a damp paper towel, and microwave on high for 1-2 minutes, or until heated through.

Notes

For added variations, consider using different fillings like vegetables or different meats. Serve with salsa or avocado for a delightful breakfast experience.
