These Freezer Breakfast Burritos are a nutritious and convenient solution for busy mornings, packed with protein and customizable to suit your taste.

Ingredients

  • 12 large eggs
  • 1/2 cup milk
  • 1 pound breakfast sausage, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 12 (10-inch) flour tortillas
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. Whisk the eggs, milk, salt, and pepper in a large bowl until well combined.
  2. Heat the vegetable oil in a non-stick skillet over medium heat.
  3. Pour the egg mixture into the skillet. Cook while stirring occasionally until the eggs are set but still slightly moist.
  4. Remove the scrambled eggs from the skillet and set aside.
  5. Warm the tortillas slightly in the microwave or on a skillet until they are pliable.
  6. Layer a portion of the scrambled eggs, crumbled sausage, and shredded cheeses on each tortilla.
  7. Fold in the sides of the tortilla and roll it up tightly to form a burrito.
  8. Wrap each burrito individually in plastic wrap, followed by aluminum foil.
  9. Place all wrapped burritos into a freezer-safe bag or container and freeze for up to 3 months.
  10. To reheat, remove the foil and plastic wrap, then wrap the burrito in a damp paper towel. Microwave on high for 1-2 minutes, or until heated through.
