Delicious and convenient breakfast burritos filled with scrambled eggs, sausage, and cheese, perfect for busy mornings.

Ingredients

Scale
  • 12 large eggs
  • 1/2 cup milk
  • 1 pound breakfast sausage, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 12 (10-inch) flour tortillas
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, whisk the eggs, milk, salt, and pepper until combined.
  2. Heat the vegetable oil in a non-stick skillet over medium heat.
  3. Pour in the egg mixture and cook, stirring occasionally until the eggs are set but still moist, about 4-5 minutes. Remove from the skillet and set aside.
  4. Warm the tortillas slightly to make them pliable.
  5. On each tortilla, layer a portion of scrambled eggs, followed by crumbled sausage and a sprinkle of cheese.
  6. Fold the sides of the tortillas in, then roll them tightly from the bottom to form burritos.
  7. Wrap each burrito individually in plastic wrap, followed by aluminum foil.
  8. Place the wrapped burritos in a freezer-safe bag or container. They can be frozen for up to 3 months.
  9. To reheat, remove the foil and plastic wrap, wrap the burrito in a damp paper towel, and microwave on high for 1-2 minutes, or until heated through.

Notes

For added flavor, consider adding vegetables or trying different types of sausage.
