Freezer Breakfast Sandwiches

Quick and satisfying breakfast sandwiches that can be prepared in advance and stored in the freezer for busy mornings.

Ingredients

  • 12 eggs
  • 2 tablespoons milk
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 12 slices cooked bacon, sausage patties, ham, or Canadian bacon
  • 12 English muffins
  • 12 slices cheddar cheese (or your favorite cheese)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Generously grease a 9×13-inch pan to prevent sticking.
  3. Whisk together the eggs, milk, salt, and pepper in a large bowl until well combined.
  4. Pour the egg mixture into the prepared pan, spreading it evenly.
  5. Bake for 18-22 minutes, or until the center is just set.
  6. Remove the pan from the oven and allow it to cool for a few minutes.
  7. Cut the baked eggs into 12 equal squares.
  8. Assemble each English muffin: place a square of egg, a slice of cheese, and your choice of meat between the halves.
  9. If serving immediately, heat the sandwiches in a 350°F (175°C) oven for about 5 minutes or until the cheese melts.
  10. To freeze, wrap each sandwich tightly in foil or plastic wrap.
  11. For reheating, unwrap and bake in the oven at 350°F for about 15-20 minutes or until hot, or microwave for 1-2 minutes.

Notes

Store sandwiches in an airtight container or wrapped tightly to keep them fresh. They can last in the freezer for up to 2 months.
