Delicious and nutritious Frozen Yogurt Granola Cups made with creamy yogurt and a crunchy granola base, perfect for breakfast, snacks, or dessert.

Ingredients

  • 3/4 cup oats
  • 1/2 tsp cinnamon
  • 1/4 cup almond butter
  • 34 tbsp honey
  • 1 tsp vanilla extract
  • 1 1/2 cups Greek yogurt
  • Berries of choice for topping

Instructions

  1. In a mixing bowl, combine the oats, cinnamon, almond butter, honey, and vanilla extract. Stir until you achieve a sticky dough, adjusting with more almond butter or honey if necessary.
  2. Line a muffin pan with muffin liners, then press the granola dough evenly into the base of each cup.
  3. Spoon the Greek yogurt into each cup, smoothing out the top.
  4. Top with your favorite berries and sprinkle more granola if desired.
  5. Freeze the cups for at least four hours. When ready to serve, let them thaw slightly for easier enjoyment.

Notes

For a vegan option, swap Greek yogurt with plant-based yogurt. Store in an airtight container in the freezer for up to two weeks.
