A heartwarming and simple Garlic Butter Chicken dish that elevates weeknight dinners with its rich flavor.

  • 2 boneless chicken breasts (9oz/250g each)
  • 1/4 cup plain flour (40g)
  • 1/2 cup chicken stock (120ml)
  • 6 tbsp unsalted butter (90g), divided
  • 2 cloves garlic, minced
  • Salt and black pepper to taste
  • Olive oil for frying
  • Fresh lemon wedges for garnish

Instructions

  1. Start by combining the flour, garlic powder, salt, and black pepper in a shallow dish.
  2. Butterfly the chicken breasts to ensure even cooking, then coat them generously with the flour mixture.
  3. In a large frying pan, heat olive oil and 1 tablespoon of butter over medium-high heat.
  4. Add the chicken to the pan, cooking until golden brown on each side, about 3-5 minutes. Remove the chicken and set aside.
  5. Lower the heat to medium; add minced garlic to the same pan and sauté for 1-2 minutes until fragrant.
  6. Pour in the chicken stock and whisk in the remaining butter to create a slightly cloudy sauce.
  7. Return the chicken to the pan, spoon the sauce over it, and serve with fresh lemon wedges for garnish.

Notes

Ensure your chicken is uniform in thickness for even cooking. Don’t rush the browning process to enhance flavor.
