  • 4 boneless skinless chicken breasts
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme leaves
  • 2 tablespoons butter
  • 1 cup chicken broth
  • 2 pounds russet potatoes
  • 1/2 cup heavy cream
  • 2 tablespoons brown sugar
  • 1 tablespoon balsamic vinegar

Instructions

  1. Start by patting the chicken breasts dry using paper towels, then season both sides generously with salt and pepper.
  2. In a small bowl, combine minced garlic, chopped parsley, and thyme leaves. Rub this aromatic mixture over the chicken and let it rest for about 10 minutes.
  3. Heat the olive oil in a skillet over medium-high heat. Carefully add the chicken and sear for about 5-6 minutes, or until golden brown. Flip the chicken and cook for another 5-6 minutes, basting with melted butter for added flavor and moisture.
  4. Once cooked, remove the chicken from the skillet and keep it warm on the side.
  5. In the same skillet, add the brown sugar and balsamic vinegar, stirring until the sugar completely dissolves.
  6. Pour in the chicken broth and allow the mixture to simmer until it reduces by half, creating a rich sauce.
  7. Meanwhile, boil the potatoes in salted water until fork-tender. Drain and mash them with the butter and heavy cream until smooth and creamy.
  8. To serve, place the chicken on a bed of mashed potatoes and drizzle with the savory sauce from the skillet.

Notes

Use a meat thermometer to ensure chicken is perfectly cooked! Letting the chicken rest before cutting allows the juices to redistribute.
