A comforting and delicious meal featuring juicy garlic herb chicken, creamy mashed potatoes, and sweet glazed carrots.

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 pounds potatoes, peeled and cubed
  • 1/2 cup milk
  • 4 tablespoons butter
  • 4 cups carrots, sliced
  • 2 tablespoons brown sugar
  • 2 tablespoons butter (for glazing carrots)
  • Salt and pepper to taste (for carrots)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Heat olive oil in a skillet over medium heat. Add minced garlic, thyme, rosemary, salt, and pepper. Stir until combined.
  3. Sear the chicken breasts in the skillet for about 3-4 minutes on each side until golden brown.
  4. Transfer the chicken to the preheated oven and bake for 20-25 minutes, or until fully cooked.
  5. Fill a pot with salted water and bring it to a boil. Add cubed potatoes and cook until tender.
  6. Drain the potatoes, then mash them with milk and butter; season with salt and pepper.
  7. Melt 2 tablespoons of butter in another pan over medium heat. Add sliced carrots and brown sugar; cook until carrots are tender and glazed.
  8. Serve the chicken alongside the creamy mashed potatoes and glazed carrots.

Notes

For perfectly mashed potatoes, cook until fork-tender and don’t skimp on the butter and milk. Consider using fresh herbs for added flavor in the mashed potatoes.
