  • 4 cloves of garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon olive oil

  • 1 tablespoon butter
  • 4 large russet potatoes, peeled and cubed
  • 1/2 cup milk
  • 4 tablespoons butter

  • 1 pound carrots, peeled and sliced into coins
  • 2 tablespoons butter
  • 2 tablespoons honey
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix the minced garlic, chopped thyme, and rosemary with olive oil. Season with salt and pepper to taste.
  3. Rub the garlic herb mixture all over the chicken breasts, ensuring they are well coated.
  4. Heat a large ovenproof skillet over medium-high heat. Add the butter and let it melt until sizzling.
  5. Sear the chicken breasts for about 3-4 minutes on each side until they turn golden brown.
  6. Transfer the skillet to the oven and bake for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  7. While the chicken bakes, bring a large pot of salted water to a boil. Add the cubed potatoes and cook them for 15-20 minutes until tender.
  8. Once cooked, drain the potatoes and return them to the pot. Add milk, 4 tablespoons of butter, and season with salt and pepper. Mash until smooth and creamy.
  9. In a medium skillet over medium heat, melt 2 tablespoons of butter. Add the sliced carrots and sauté for about 5-6 minutes until they begin to soften.
  10. Drizzle the carrots with honey and season with salt and pepper. Continue to cook for an additional 3-4 minutes until they are glazed and tender.
  11. Serve the juicy chicken with the creamy mashed potatoes and sweet glazed carrots. Enjoy!
