A delightful weeknight meal of tender chicken thighs and crispy parmesan paired with hearty baby potatoes.

  • 4 chicken thighs
  • 2 cups baby potatoes, halved
  • 4 cloves garlic, minced
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix together the olive oil, minced garlic, salt, black pepper, and Italian seasoning until well combined.
  3. Add the chicken thighs and halved baby potatoes to the bowl. Toss everything to ensure they’re evenly coated with the seasoning mix.
  4. Spread the chicken and potatoes out in a single layer on a baking sheet.
  5. Evenly sprinkle the grated parmesan cheese over the chicken and potatoes.
  6. Bake in the preheated oven for approximately 30-35 minutes, or until the chicken is cooked through and the potatoes are tender.
