Fluffy, cloud-like pancakes that puff up in the oven, perfect for breakfast or brunch.

Ingredients

  • 6 large eggs
  • 1 cup milk (240 ml)
  • 1 cup all-purpose flour (120 g)
  • Dash of salt
  • 1 teaspoon vanilla extract (5 ml)
  • 5 tablespoons butter (70 g)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Place the butter in a 9×13 inch metal baking dish. Slide it into the oven until melted.
  3. Combine eggs, milk, flour, salt, and vanilla in a blender. Blend until smooth and creamy.
  4. Pour the batter carefully over the bubbly, melted butter in the baking dish.
  5. Bake for 22-27 minutes, or until the edges are golden brown and the pancake is puffy.
  6. Serve with a sprinkle of powdered sugar and drizzle with syrup.

Notes

For variations, try adding diced apples and cinnamon, or mix in cooked bacon or cheese for a savory twist.
