A classic Chicken Parmesan that is both quick to make and impressively delicious, perfect for family dinners or special occasions.

Ingredients

  • 1 tablespoon of olive oil
  • 1 teaspoon of chopped fresh thyme
  • 1 teaspoon of chopped fresh rosemary
  • 1 teaspoon of chopped fresh Italian parsley
  • 4 chicken cutlets (about 3 ounces each)
  • 1 teaspoon of salt
  • ½ teaspoon of freshly ground black pepper
  • ¾ cup of marinara sauce
  • ¼ cup of shredded mozzarella cheese
  • 8 teaspoons of grated Parmesan cheese
  • 1 tablespoon of unsalted butter, cut into small pieces

Instructions

  1. Preheat your oven to 500°F.
  2. Mix the olive oil, thyme, rosemary, and parsley to create a vibrant herb oil.
  3. Brush this herb oil generously on both sides of each chicken cutlet. Season with salt and pepper.
  4. Heat a heavy, ovenproof skillet over high heat. Add the chicken cutlets and sear them for about 1 minute on each side until golden.
  5. Remove the skillet from heat. Spoon marinara sauce over the cutlets, then sprinkle with mozzarella and Parmesan cheese.
  6. Dot with small pieces of butter and bake for about 5 minutes, or until the cheese is melted and bubbly.
  7. Serve hot with extra marinara sauce on the side.

Notes

For best flavor, use fresh herbs. Leftovers can be stored in an airtight container for up to 3-4 days in the fridge, or freeze for up to three months.
