A comforting classic that brings the flavors of Italy to your dining table, minus the gluten.

  • 4 boneless, skinless chicken breasts
  • 1 cup gluten-free breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 large eggs
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • Fresh basil for garnish (optional)
  • Olive oil for frying

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine gluten-free breadcrumbs, grated Parmesan, garlic powder, onion powder, salt, and pepper in a shallow dish.
  3. Beat the eggs in a different bowl.
  4. Dip each chicken breast into the beaten eggs, ensuring they are well-coated.
  5. Coat the chicken in the breadcrumb mixture until fully covered.
  6. Heat olive oil in a large skillet over medium-high heat.
  7. Fry the coated chicken breasts for about 4-5 minutes on each side, or until they are golden brown.
  8. Transfer the fried chicken to a baking dish.
  9. Pour marinara sauce over each piece and sprinkle with shredded mozzarella cheese.
  10. Bake for 20-25 minutes, or until the chicken is cooked through and the cheese is bubbly and melted.
  11. Garnish with fresh basil before serving.

Notes

For extra crunch, consider adding crushed nuts to your breadcrumb mixture. You can prepare the chicken and breadcrumbs ahead of time and store them in the fridge until you’re ready to cook.
