A quick and easy gluten-free cinnamon roll made in a mug, perfect for satisfying late-night cravings or cozy mornings.

  • 1/4 cup gluten-free pancake mix
  • 1/4 tsp baking powder
  • 2 tbsp almond milk (plus more, if needed)
  • 1 tbsp maple syrup
  • 1 tsp coconut oil
  • Pinch of sea salt
  • 2 tsp coconut sugar
  • 1/4 tsp cinnamon
  • 2 tbsp powdered sugar
  • 1 tsp almond milk (for glaze)

Instructions

  1. Grease a shallow mug or ramekin to prevent sticking.
  2. Mix together the gluten-free pancake mix, baking powder, almond milk, maple syrup, coconut oil, and a pinch of sea salt until smooth; if the batter is too thick, add a splash more almond milk.
  3. Stir together the coconut sugar and cinnamon in a separate bowl to create your cinnamon sugar mixture.
  4. Sprinkle the cinnamon sugar over the batter and gently swirl it into the mix using a knife or chopstick.
  5. Microwave the mug for about 60 to 72 seconds, keeping an eye on it to ensure it doesn’t overflow.
  6. Whisk together the powdered sugar and remaining almond milk for the glaze until smooth.
  7. Drizzle the glaze over the warm roll and enjoy immediately!

Notes

For an extra kick, add a pinch more cinnamon to the batter or try different mix-ins like chocolate chips or nuts.
